Healthy dinner

Earlier this week I was craving a deliciously fresh and healthy dinner. I got some great ideas from friends via Facebook…but I ended up with something entirely different than what was suggested.

I decided on tilapia, sautéed spinach, cooked carrots and some mashed taters.

For the spinach, I added a little olive oil, garlic and S+P. Carrots are simply boiled. The tilapia had some olive oil, chili powder, cayenne pepper, and S+P.

Everything tasted so fresh and we weren’t stuffed afterwards.

For those who offered suggestions, I am looking forward to trying those meals, too!  I’ll be sure to share when I do…and to give you props.
